Chocolate Cookie Dough Sandwiches are a cookie dough whipped cream sandwiched in between two rich, chewy chocolate cookies. This is a dessert lover’s ultimate dream!
Chocolate Cookie Dough Sandwiches
This dessert combines two of my very favorite things. Chocolate cookies and cookie dough. And the fact that no forks are required. Okay, that is three things but still.
These sandwich cookies would be so fun made miniature.. or GIANT. I think I’d prefer the giant ones.
Because the filling is made from a whipped cream, the cookies are kept in the fridge and served cold. They kind of remind me of an ice cream sandwich in that sense.
The Chocolate Cookie
The chocolate cookie is rich and chewy. The cookie is made by first creaming the butter and sugars together. The wet ingredients (vanilla and an egg) are mixed in to the butter mixture.
Cocoa, flour, soda, salt and cornstarch are then added to the dough. The dough shouldn’t be so wet that it sticks to your hands but it shouldn’t be so dry it has a hard time coming together. It should be playdoh like consistency.
I always use a cookie scoop when making cookies, especially these. It insures that each and every cookie is the same size, making the sandwiches perfect. Cookie scoops come in many different sizes, my personal favorite is #50. You can get it on amazon here.
Bake at 350° for 8 minutes. The cookies won’t flatten at all while baking, they will stay in the ball shape. As soon as the cookies come out of the oven, use the bottom of a glass cup and press the cookies down to flatten them. This will make them super chewy!
Transfer the cookies to a wire rack and let them cool completely before filling them.
Cookie Dough Filling
Whipped cream + egg free cookie dough = proof that dreams do come true. It is literally eggless cookie dough folded into freshly whipped cream. The result is a light, fluffy cookie dough!
The eggless cookie dough is made from butter, sugars, vanilla, milk, flour, salt and mini chocolate chips. I’ll admit, sometimes I whip this up for no other purpose than to eat it.
The whipped cream is SO simple. Using either handheld beaters or your stand mixer with the whisk attachment, turn the speed up to as hight as it will go and just whip it until you have whipped cream! Whip until stiff peaks form.
Gently fold the cookie dough and whipped cream together until smooth.
Sandwich Assembly and Storage
Once the chocolate cookies have completely cooled, either spread or pipe the whipped cream cookie dough onto one side of the cookie and then top it off with another cookie.
Because the filling is made from whipped cream, the cookies MUST be stored in the refrigerator. They are meant to be served cold. They will stay fresh in an air tight container in the fridge for 3-4 days.

- 2/3 cup butter room temperature
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 egg
- 4 tsp vanilla
- 1 1/2 cup flour
- 1/2 cup cocoa
- 1 tsp baking soda
- 1/2 tsp salt
- 2 tsp cornstarch
Cookie Dough Filling
- 1/4 cup butter room temperature
- 1/8 cup granulated sugar
- 1/4 cup packed brown sugar
- 1 tbsp milk
- 1/2 tsp vanilla
- 1/2 cup flour
- 1/4 tsp salt
- 1/4 cup mini chocolate chips
- 1/2 cup heavy whipping cream
Instructions
Chocolate Cookies
- Preheat oven to 350°.
- In the bowl of a stand mixer, combine the butter and sugars. Cream together for 2 minutes.
- Scrape down the sides and add in the vanilla and egg. Mix until combined.
- Add all of the dry ingredients to the bowl and mix until thoroughly combined.
- Use a cookie scoop and scoop the dough onto a parchment paper lined cookie sheet. Bake at 350° for 8 minutes.
- As soon as the cookies come out of the oven, use the bottom of a drinking glass and smash the cookies flat. Transfer to a wire cooling rack. Make sure to cool completely.
Cookie Dough Filling
- Cream together the butter and sugars.
- Scrape sides and add in vanilla and milk.
- Mix in the flour and salt until thoroughly combined. Stir in the chocolate chips. Set aside.
- Using beaters or the whisk attachment on a stand mixer, whip the whipping cream until stiff peaks form.
- Gently and throughly fold the whipped cream and cookie dough together.
Sandwich Assembly
- Once the chocolate cookies are completely cool, spread or pipe the cookie dough filling on the backside of a cookie.
- Top with a second cookie.
- Store in the fridge and serve cold.
