Easy Chinese Chicken Salad

I have been buying Tai Pei frozen entrees for a while now, My son can not get enough of the Orange Chicken!

He loves the chicken, Marlee loves the rice. I love the fact that they are inexpensive, full of healthy ingredients with no additives, preservatives or anything artificial and that Chase can make them by himself in  literally minutes!

My kiddos have chosen to eat this for lunch the majority of days lately, Chase knows all he has to do is toss it in the microwave and press the number 5. Check and done!

Tai Pei Orange Chicken Entree

I was recently at a family reunion. The night of the large (I’m talking 170+ people!!) family dinner, I did what I always do.

Hone in on all of the salads and go crazy. There are countless salads that have been brought by aunts, cousins, nieces, in-laws.. you name it! Each is unique and absolutely delish.

This year I didn’t even get to taste test them all! The second salad I tried, I couldn’t get enough of! I just kept going back and getting more!

It was a Chinese Chicken Lettuce Salad with the most amazing dressing.

After I got home, Chase was eating some Orange Chicken for lunch and I was day dreaming of the Salad at the reunion and then the idea struck.

Tossing all of that Orange Chicken, flavor infused rice and veggies into a loaded green salad with that amazing homemade dressing.

I think a winner was born.

How to Make the Easiest Chinese Chicken Salad with Homemade Dressing

First, toss the Orange Chicken into the microwave.

While the Orange Chicken, rice and veggies are cooking, lets prep the rest of the salad and dressing.

For the dressing, combine the liquid from a can of mandarine oranges, soy sauce, vinegar, brown sugar & sesame oil in a blender. Pulse until the sugar has dissolved.

Chop the romaine lettuce and purple cabbage. Slice the bell peppers.

Gather the remaining components to the salad- matchstick carrots, the leftover mandarin oranges, crispy wonton strips, chow mien noodles & sesame seeds for garnish.

By this time, the orange chicken should be done. Pull it out of the microwave. When you open the container, you’ll find everything layered. the rice and sauce on the bottom, veggies and then the chicken on top (as pictured below). Give everything a good stir to coat everything with the delicious orange sauce.

Give it a good stir and then use a sharp knife to cut everything into smaller, bite-sized pieces.

Toss all of the ingredients and the dressing together in a large bowl. Serve Immediately.

Ingredients:

Chinese Chicken Salad

  • 1 Tai Pei Orange Chicken Entree
  • 1 head romaine lettuce chopped
  • 1/4 purple cabbage chopped
  • 2 bell peppers sliced
  • 1 can mandarin oranges juice reserved
  • crispy wonton strips
  • chow mein noodles
  • sesame seeds for garnish

Homemade Orange Sesame Dressing

  • 1 cup mandarin orange juice from can
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 1 tbsp white vinegar
  • 1/4 tsp sesame oil

Instructions

  1. Pulse the dressing ingredients together in a blender until the brown sugar has dissolved. Set aside.
  2. Microwave the Tai Pei Orange Chicken for 5 minutes. Let it rest for 2 minutes. Stir and then cut the meat and veggies into smaller bite-sized pieces.
  3. Toss the orange chicken and rice together with the remaining salad ingredients.
  4. Drizzle with a little of the dressing at a time, tossing in between to coat the salad in the dressing.
  5. Serve immediately.
