You guys, I can’t believe it. My little Marlee will be T H R E E this month! I was reminiscing on her second birthday this evening, and SO much has changed over the past year.
Last year, Marlee couldn’t even say her own name right, now she she knows how to spell her name. It really isn’t fair how quickly things change with kids.
Chase will be F I V E next month.. and of to the Elementary School in the fall.. Okay, I better stop or eyes will be malfunctioning before we know it.
The Best Birthday Cake Ever
My little (way too!) soon to be 3 year old really likes her sugar cookies. We make sugar cookies at least monty at our house.
So, making her Birthday Cake out of sugar cookies was a no brainer! The vanilla buttercream is just a given. Marlee can be found eating fist full of this stuff when I turn my back. 😉
What 3 year old kid doesn’t want candy all of the time, not to mention on their Birthday Cake? None. The answer is none.
In my humble (but totally candy-professional) opinion; candy is always a good idea on Birthdays.
How to make the PERFECT Sugar Cookie Birthday Cake
I made half a batch of my absolute favorite sugar cookie recipe. I strongly suggest heading over and reading this post about the sugar cookies before making this double layer Birthday Cake! There are great tips and info over there.
When rolling the dough out, it is very helpful to roll directly onto the parchment paper, that way the cookie doesn’t have to move before baking.
I then drew the number 3 on a piece of paper approx. 5,734 times.. and then cut it out. I set the paper onto of the rolled out dough and used a sharp knife to ‘trace’ the paper cut out. Remove the scraps and bake at 350° for 10 minutes.
With the leftover dough, I like to roll it into a log and then freeze it. When you need a quick treat, just take out of the freezer and thaw for a bit, then slice, bake and serve. 🙂
Let the cookies cool completely before moving them. Even after they have cooled completely, move with care!
I used my favorite vanilla buttercream frosting for this Sugar Cookie Cake. I piped the frosting on, making large dots all over the bottom cookie. I topped with the other sugar cookie and then repeated the piping process.
You can use whatever tip you’d like. The larger the better! I used a Wilton #8B.
I topped the cake with large and small gumballs, gummy bears, starbursts and nerds. The possibilities are really endless though! I think I may have to make a chocolate lover’s version one day..

Sugar Cookie Birthday Cake

Sugar Cookie Birthday Cake is a double layer sugar cookie, filled and piped with vanilla buttercream. The Birthday Cake is topped with colorful gumballs, gummy candies and nerds.
Ingredients
Sugar Cookie
- 1/2cup butter
- 1/2cup sugar
- 1egg white
- 1tsp vanilla
- 1 1/2cup flour
- 1tsp baking powder
Vanilla Butter Cream
- 1/2cup butter
- 3cups powdered sugar
- 4tbsp milk
- 2tsp clear vanilla extract
- candy toppings
Instructions
- Preheat oven to 350°
- Cream the butter and sugar together for 2 minutes.
- Scrape sides of bowl and add egg white and vanilla. Combine thoroughly.
- Mix in flour and baking powder until completely combined. The texture should be similar to playdoh. If it is too wet, at a little more flour. If it is too dry, at a little water. 1 1/2 cups is always about perfect for me.
- Roll out onto parchment paper. Use stencil and cut desired number, letter or shape twice.
- Remove scraps from the parchment paper.
- Carefully put the parchment paper (with the cookies on it) onto a cookie sheet. Bake at 350° for 10 -12 minutes. Pull when the center is puffy, no longer glossy and the edges are barely starting to turn color.
- Cool completely.
- Cream together all butter cream ingredients.
- Pipe large dots onto the cooled cookie. Top with the second cookie and repeat the piping process.
- Decorate the top with a variety of candy.

Can this be made the day before the party, or only on the same day?

It could definitely be made the day before!! I actually did that, too! Just cover it lightly with plastic wrap to keep everything nice and soft. ?
