Angel Food Cake and Strawberry Cups are the perfect, no bake treat to take to a wide variety of situations.

I was in charge of dessert for my friend’s baby shower recently (come on out and play, Baby W!) and I couldn’t really nail down what I wanted to do.

I thought about cake, but then we’d have to bring a knife and spatula just to serve it. Plus, we were going to be outside on some picnic tables, where would be place the knife for safe keeping?? Mmmm.. better not.

My next thoughts were cupcakes. Fun, just like cake but no knives required. The cupcake train really did take a long trip but the final stop happened when my daughter had been sick, she wanted me 24/7 and I felt like I shouldn’t be baking for other people in my kitchen.

So, I decided store bought angel food cake, sliced strawberries and some vanilla buttercream in individual cups (no knives required. ?) were going to have to do.. but they did so much more than just work!!

These little cups were actually extremely delicious!! I will definitely be making these again, and probably soon!

Making and Assembling the Angel Food Cake and Strawberry Cups

The first thing you’ll need are the ingredients. For the cups, you’ll need an angel food cake (I bought mine at Walmart, thank you grocery pick up!) and strawberries. Butter, powdered sugar, milk and vanilla are the ingredients for the buttercream.

First, make the buttercream. It is as easy as throwing all of the ingredients into a bowl and turning on your mixer. If you find the buttercream slightly stiff, just add a splash of milk. If you find that it is too soft, add a little bit more powdered sugar. This buttercream is very forgiving.

The next step is to cut the Angel Food cake. I sliced the cake all around into about 1 inch slices. I then took each slice and cut it into 4 strips, then each strip into cubes.

I found that the whole Angel Food cake from Walmart was enough to make about 15 individual cups with.

Next I cut up the strawberries. I used 1 lb of strawberries to make about 15 individual cups. I could have used more strawberries, though. I don’t think that there can ever too many strawberries!

To cut the strawberries, I first cut off the stem. I then proceeded to cut the strawberries into 1/2 inch cubes. I found that if the strawberry was too small, it almost disappeared against the cake and buttercream. 1/2 inch cubes of strawberry was the sweet spot, not to big, not too small.. just perfect.

To make these Angel Food Cake and Strawberry Cups it is very important to use a quality plastic cup. Very hard, heavy duty, CLEAR cups are a must. None of those kind of clear, flimsy cups for this. Mason jars would also be very fun!

The cups I used I also got at Walmart. I got 25 cups for under $1.

I tried building each cup individually at first, but then found it was much easier to do five or so at the same time.

Next, a handful of strawberries goes onto the Angel Food Cake. I wish I would have had time to slice more strawberries. Really, you can’t have too many strawberries!

The next step is to pipe a little of that buttercream onto the top of the strawberries! I used a 2D tip when I piped the frosting on top. Using a circular motion, starting from the outside and working my way in, I piped the buttercream onto the top of the cup.

I found these little plastic forks at the Dollar Store and couldn’t pass up the cuteness! Small= adorable, right? I stuck a fork into each cup and called it good!

Ingredients

  • 1 store bought angel food cake
  • 1 lb strawberries
  • 1 cup butter room temperature
  • 6 cups powdered sugar
  • 6 tbsp milk
  • 4 tsp vanilla (clear)
  • 15 clear plastic cups

Instructions

  1. Cut the angel food cake into 1 inch cubes.
  2. Wash and dice the strawberries into 1/2 inch cubes.
  3. Add the butter, powdered sugar, milk and vanilla to the bowl of a stand mixer. Starting very slowly and gaining speed gradually, mix the ingredients together.
  4. Once all of the ingredients are incorporated, turn them mixer on high and whip for 2-3 minutes.
  5. If the frosting is a bit stiff for your liking, just add a little more milk. If it is too soft, add some more powdered sugar. This buttercream is very forgiving.
  6. To assemble, place a good handful of angel food cake into the bottom of each clear cup.
  7. Top the angel food cake with diced strawberries.
  8. Pipe the buttercream onto the top of the cup.
  9. The cups are ready to be served. These do not need to be refrigerated, and will keep well at room temperature for several hours.
