Shredded Beef Taquitos will win over teenage boys and everyone else that eats like they are a teenage boy. (ME!) True story: I usually finish my husband’s leftovers, not the other way around. Unless we are having these taquitos, then he won’t leave a crumb on his plate! These taquitos are SO easy to customize to your liking too. #winning.

The meat I use is my basic Shredded Beef recipe. The meat is already extremely flavorful so I tend to leave it alone. If you’d like, you could totally season the meat with taco or fajita seasoning! I wrap the meat and some shredded cheese up in a small corn tortilla. Corn tortillas can be a little tricky, I find that they work best when they are very warm and moist. I usually wet some paper towesl and heat a few tortillas in the microwave for about 20 seconds sandwiched between two paper towels. That usually gets them more pliable. I fry them up quickly in some oil on stovetop then serve them with some sour cream and salsa! Delish!Shredded Beef Taquitos are simple and flavorful. Shredded Beef Taquitos

Shredded Beef Taquitos are simple and flavorful. The crunch of the corn tortilla against the perfectly shredded beef and melted cheese is a winning combination!

Ingredients

  • 3 cups shredded beef see link below
  • 1 cup shredded cheese
  • 12 small corn tortillas
  • Seasoning for the meat optional
  • 2 tbsp oil

Instructions

  1. Season meat if desired.
  2. Heat the tortillas up in the microwave sandwiched between two damp paper towels. While the tortillas are very warm and moist roll 1/4 cup of shredded meat and a generous tablespoon of shredded cheese up into the tortilla.
  3. Repeat with the remaining tortillas.
  4. Heat the oil in a large frying pan over medium heat. Fry the taquitos seam side down first for 30 seconds to 1 minute or until crisp. Roll and repeat on all sides. I usually fry them in a few batches.
  5. Cool slightly and then serve with sour cream, salsa or anything else you can dream up!
