Shredded Beef Taquitos

Shredded Beef Taquitos are simple and flavorful. The crunch of the corn tortilla against the perfectly shredded beef and melted cheese is a winning combination!

Ingredients

  • 3 cups shredded beef see link below
  • 1 cup shredded cheese
  • 12 small corn tortillas
  • Seasoning for the meat optional
  • 2 tbsp oil

Instructions

  • Season meat if desired. 
  • Heat the tortillas up in the microwave sandwiched between two damp paper towels. While the tortillas are very warm and moist roll 1/4 cup of shredded meat and a generous tablespoon of shredded cheese up into the tortilla. 
  • Repeat with the remaining tortillas.
  • Heat the oil in a large frying pan over medium heat. Fry the taquitos seam side down first for 30 seconds to 1 minute or until crisp. Roll and repeat on all sides. I usually fry them in a few batches.
  • Cool slightly and then serve with sour cream, salsa or anything else you can dream up!
