Easy & fast No Bake Cheesecake Recipe

This cheesecake surprises everyone- not only because they can’t stop eating it but because it cuts as if it was a baked cheesecake! But in all honesty, this takes just mere minutes to whip up.

Just a handful of ingredients (we will talk about those below) and you are well on your way to the creamiest and easiest cheesecake of your life.

Okay, enough chit chat, let’s make some cheesecake.

What is No Bake Cheesecake Filling?

The filling for my No Bake Cheesecake recipe are listed below. 

  • 1 pint whipping cream
  • 3/4 cup sugar
  • 24 oz cream cheese room temperature
  • 1 pkg cheesecake (or vanilla) flavored pudding mix
  • crust of choice 

Yes, that is IT! No, I’m not kidding! 

How to make this Easy No Bake Cheesecake Recipe

Lets first talk about the crust.

I made my own crust using Graham Crackers and melted butter. Any cookie would work though! Oreo’s, Nilla wafer, Chips Ahoy cookies, Nutter Butter’s.. you name it! You’ll need about 2-3 cups of cookie crumbs and 1/2 cup of melted butter. 

You could make your own or really go easy and buy a store bought crust! This recipe will make enough to fill two store bought crusts.  If you are using a springform pan for the classic cheesecake look, this will fill an 8 inch springform pan to the brim.

Next, whip some cream and sugar together until stiff peaks form.

You can do this using a stand mixer or handheld electric beaters. To make the whipped cream, start slowly and gradually gain speed (to avoid splattering the cream everywhere!) and just mix and mix until the cream has turned to whipped cream!

Next, in a separate bowl, combine room temperature cream cheese and a package of cheesecake flavored pudding (just the powder!).

It is important to use room temperature cream cheese to insure a smooth finished cheesecake.

If you are in a pinch and need room temperature cream cheese in a jiffy, placing a warm rice bag or a heating pad on top of the cream cheese helps to speed up the process!

Combine the pudding mix and cream cheese until nice and smooth.

Next, combine the whipped cream and cream cheese mixture together!

I have tested this by gently folding them together until combined and just tossing them both into my stand mixer and turning the mixer all the way up and both worked great and tasted amazing!

I prefer to just use my stand mixer, it is much easier and faster.

Pour into the crust and refrigerate until ready to serve! This could be served immediately but it slices better if it chills out in the fridge for a few hours prior to serving.

How long does it take for No Bake Cheesecake to set?

You’ll want to refrigerate for at least 6 hours before slicing. I, personally, like to let it sit in the fridge overnight. I find it easiest to just make the cheesecake the day before I need it!

Why is my No Bake Cheesecake runny?

 This is a result of not whipping your cream and sugar long enough. Your whipped cream needs to be very stiff, forming visible peaks that do not move. If the Whipped Cream is loose, the cheesecake will also be that way. 

Can I freeze No Bake Cheesecake?

Yes! I suggest slicing it into single servings prior to freezing. Separate each slice with parchment paper. Set in the fridge overnight before eating.

Instructions

    Looking to try this out today! Hope you don’t mind but I decided to try this using pre made coolwhip instead of whipping up my own whipped cream (Lol did plenty of whipping up whipped cream as a kid so, if I can possibly use a substitute I will) I am also thinking of using half a pouch of the jello instant cheesecake pudding mix and mixing it with half a pkg of the French vanilla flavor. I think it will give it the little tang plus a lovely vanilla flavor without using an extract, paste or adding a couple of real vanilla beans “seeds” to the mix. I’ll let ya know if it’s a roaring success or epic fail *lol*. If it’s a success I may try other combos for interesting flavors like chocolate w/the vanilla or maybe cheesecake with lemon or lime (or a lemon/lime combo with a hint of vanilla? I love playing with flavors that work together and this is a fun and tasty way to do it that’s quick and fairly easy too.) 🙂

  2. Hi Risa! How did it turn out for you? I find that the cheesecake does work and taste good with cool whip, but the final texture is quite a bit different. Hopefully you thought it was delicious!!

  3. I made this for Easter dessert and it was delicious. It was messy and hard to get out of the springform pan, even after I refrigerated it for 6 hours. Otherwise, it had awesome flavor and I will definitely make this again!

  4. I am so glad it was a hit for Easter Dinner! Next time, make sure your whipped cream is forming extremely firm peaks and that should help with the messiness issue. 🙂

    My go to recipe for the best ever graham crust.
    Actually any graham crust recipe will do.
    Remove 1/2 cup of graham crumbs and replace with gingersnap crumbs. Use food processor to crumble gingersnaps to course texture. (It will sound like the machine is tearing apart.) Remove and process grahams. Put gingersnaps back in with the grahams and all will process just fine. I make batches and put in zip lock bag so I just add the melted butter when I am ready for cheesecake.
    Can’t wait to make this no bake in my springform pan.

    I cannot wait to try this! I’ve been looking for a cheesecake recipe that I could easily adapt. My middle daughter turns 13 this Wednesday and her cake of choice is Banana pudding cheesecake. I haven’t been too thrilled with the banana pudding cheesecake recipes I’ve found on Pinterest. The ingredients, methods and photos just weren’t to my liking.
