Loaded Honey Mustard Chicken and Potatoes is one of those meals that taste super fancy and make it seem like I’ve been slaving away for HOURS.. when really it’s done easily in abut 20 minutes. Now that is my kind of meal! Dan always gushes over this one.

I’ve made something similar to this for years, but converting it to the Instant Pot was the best decision I’ve made since deciding to ride the kiddie zip line at the park.Loaded Honey Mustard Chicken and Potatoes are sliced potatoes, diced chicken smothered in a sweet and savory honey mustard sauce topped with bacon and cheese. This Instant Pot friendly meal is one to love!

This meal comes together quickly and easily with minimal ingredients. First saute the chicken in the Instant Pot with some seasonings. While the chicken is doing it’s thing, wash and slice the potatoes.  After the chicken has browned some, deglaze the pot with chicken broth and then add honey, mustard and the potato slices. Cook on Manual HIGH for 3 minutes, then let it NPR for 5 minutes before QR. I like to fry up my bacon while the Instant Pot is going.

Transfer the potatoes and chicken from the Instant Pot to an oven safe dish. Now it is time to thicken the sauce. To thicken the sauce, add some grated swiss cheese and a butter/flour paste. Once the sauce has thickened to your liking, drizzle it over the potatoes and chicken. Loaded Honey Mustard Chicken and Potatoes

Loaded Honey Mustard Chicken and Potatoes are sliced potatoes, diced chicken smothered in a sweet and savory honey mustard sauce topped with bacon and cheese. This Instant Pot friendly meal is one to love!

Ingredients

  • 2 tbsp butter divided
  • 1 tsp flour
  • 1 chicken breast diced
  • 4 medium potatoes sliced
  • 1 tsp garlic minced
  • 2 tsp onion minced
  • pinch salt & pepper
  • 1 cup chicken broth
  • 1/4 cup honey
  • 1/4 cup mustard
  • 1 cup swiss cheese grated, divided
  • 1/2 lb bacon cooked, crumbled

Instructions

  1. Turn the Instant Pot onto Saute, add 1 Tbsp of butter to the pot. Once melted, add in the diced chicken, garlic, onion, salt and pepper. Brown the chicken.
  2. While the chicken is browning, wash and slice the potatoes. I usually leave the skin on.
  3. When the chicken has browned, pour in the chicken broth and deglaze the pot making sure to scrape any little bits off of the bottom. Add the honey, mustard and potatoes. Stir to combine.
  4. Cook on Manual  HIGH for 3 minutes. Allow for 5 minute NPR then QR. ( I like to cook my bacon during this step!)
  5. Transfer the potatoes and chicken to an oven safe dish leaving the liquid in the pot.
  6. Create a paste using the remaining 1 tbsp of butter and the flour. Turn on the Instant Pot to Saute and add the paste and 1/2 cup of swiss cheese to the sauce. Stir until thickened.
  7. Drizzle the sauce (you may have leftover, just use as much as you’d like!) over the chicken and potatoes.
  8. Top with crumbled bacon and the remaining 1/2 cup of swiss cheese. Broil until the cheese is bubbly and slightly browned.       You’ll add he potatoes right right before pressure cooking- looks like that important sentence didn’t make it into the recipe for some reason! I’ll add that now. Thanks for the heads up!
