Aaaand I kind of am in need of a happy dance right about now. I just finished watching the finale of This Is Us. (If you haven’t watched it, do it. Now. You have my permission to miss work and binge watch every episode. There are officially 36, so I’d get going.)

No spoilers here, but lets just say I am left confused, hopeful, giddy, worried and excited all at the same time. We have to wait it out until the FALL though.

I don’t watch a lot of TV (we don’t even OWN a television!) so me saying that this show is the bomb.com really means something.

My last Instant Pot Ramen recipe was so popular I HAD to experiment. I think I may like this one better than the original.

Like the first, everything is thrown into the pot and is pressure cooked for Z-E-R-O minutes. Unlike the original, this one has chicken, cashews and a sweeter sauce.

The number one question I received the first time around was ‘how do I add protein?’. Well I have figured it out for you.

Adding chunks, or slices of pre-cooked frozen chicken into the pot before pressure cooking! They are perfectly headed through in the zero minute cook time.

This is the recipe and method I use when cooking and freezing chicken breasts ahead of time.

Instant Pot Cashew Chicken and Noodles

Instant Pot Cashew Chicken and Noodles is finished in no time, literally zero minutes on high pressure! The ramen noodles soak up the sweet sauce that perfectly pairs the veggies, cashews and chicken.

Ingredients

  • 1 cup chicken broth
  • 1/4 cup brown sugar
  • 2 tbsp soy sauce
  • 1/2 tsp minced garlic dried
  • 1/4 tsp sesame oil
  • 1/8 tsp salt
  • 1 pkg Top Ramen
  • 1 cup cooked, frozen chicken chunks
  • 2 cups frozen stir fry veggies
  • 3/4 cup cashews

Instructions

  1. Put the broth, brown sugar, soy sauce, garlic, sesame oil and salt into the Instant Pot liner. Stir until combined. Place the Ramen noodles (you can break it in half if you want, I don’t though) into the liquid and then flip it over (so both sides are wet).
  2. Pour the veggies, frozen chicken and cashews on top. Lock lid and pressure cook for 0 minutes. (Z-E-R-O. Not a typo.) Quick release, give it a stir and then it is already time to eat!

Notes

The veggies do get thoroughly cooked, even though they aren't cooked for very long. If you like your veggies crispy, I would either prepare them separately or toss them on top after the noodles have cooked and close and lock the lid and let them steam for a few minutes until they are done to your liking. I always just throw mine in the Instant Pot first thing though.

    Been looking for some easy IP recipes to share with family new to IP cooking and scared to death. This one seems AMAZING and easy. My niece is a hospice nurse and tries to keep her family eating healthier, while working full-time, juggling 2 little dogs, 2 elementary school-age kids and a working hubby, and being on call. This one will be her favorite once she tries it. I can’t wait to share and try it out, myself!!!

    Hi Karli, I made your recipe again! It’s been too long. My husband requested it! 😍 Anyway, do you think this could work the same way with kielbasa sausage?! I have some in the fridge and frozen veggies. I don’t have to use brown sugar. Maybe Cajun seasoning. Would zero pressure still work? I’d think so considering the sausage is precooked. 🙂 TIA!
