Instant Pot Beef Stew is a simple and hearty meal done in under an hour from start to finish thanks to our friendly Electric Pressure Cooker, the Instant Pot! The beef chunks are tender, the potatoes and carrots are perfectly cooked and that gravy is to die for!

Instant Pot Beef Stew- fast as LIGHTENING!

Growing up, beef stew was one of my favorite meals. Walking through the door from a long day of school to smell stew simmering on the stove… SWOON! 

My mouth would instantly water and dinner time could not come soon enough! Although, there was one thing that I didn’t like. I BURNED MY TOUNGE EVERY TIME! I just couldn’t wait to get that goodness in my mouth and regretted it for 3 days after. 

Burning your tongue is the worst, right? Stew and Hot Cocoa. I swear, it’s impossible to not burn your mouth.

Let’s talk about this Instant Pot though. Perfectly tender stew meat in under and hour. THAT is unheard of on the stovetop! We are working with pressure here, which is why it is so speedy.  I love love love my Instant Pot. You can find all of my Instant Pot Recipes Here.

What is the difference between Stew Meat and Tenderized Stew Meat? Will picking one over the other change my stew?

As you could probably guess, stew meat labeled as ‘Tenderized Stew Meat’ in grocery stores has already been tenderized a bit, generally have smaller chunks and those chunks aren’t as uniform as regular stew meat. 

Tenderized Stew Meat doesn’t require as long of a cook time. 

If making this recipe with Tenderized Stew Meat, you’ll cook on manual HIGH for 20 minutes before adding the veggies.

If making this recipe with regular Stew Meat, you’ll cook on manual HIGH for 35 minutes before adding the Veggies.

How to make Beef Stew in the Instant Pot 

The first thing you’ll want to do is get your Instant Pot preheating on Sauté HIGH. In order for the saute function to work properly, the display needs to read HOT before any food goes into the Instant Pot.

While the Instant Pot is heating up, toss your stew meat into a mixture of flour and salt.

I used tenderized stew meat, which is why the meat is not in uniform cubes and the pieces are slightly smaller. See above for the exact differences and how it will effect your final stew.

Once the Instant Pot display reads HOT, melt some butter in the Instant Pot and then brown the stew meat.

Because the meat is covered with flour, the flour will cake to the meat a bit. That is okay! The leftover flour on the pieces of meat will help thicken the gravy a bit at the end.

Once the stew meat has been browned (we aren’t cooking it through, just browning the outsides) we will deglaze the Instant Pot. Deglaze with beef broth & water.

Then add in a package of Au Jus Seasoning, parsley and Worcestershire sauce. Secure the lid. If using tenderized stew meat (like me!) cook on HIGH for 20 minutes. If using regular stew meat, cook on HIGH for 35 minutes.

While the stew meat is cooking, prep your veggies.

Slice onions, peel and cut your potatoes and measure out your carrots. Cut the potatoes so they are approx 3/4 inch cubes.

After the meat is finished cooking, quick release the pressure by turning the knob. Add the veggies to the Instant Pot and pressure cook on HIGH for an additional 2 minutes. Quick release the pressure once again. Season with salt and pepper to taste, stir and serve.

Instant Pot Beef Stew

Instant Pot Beef Stew is a simple and hearty meal done in under an hour from start to finish thanks to our friendly Electric Pressure Cooker, the Instant Pot! The beef chunks are tender, the potatoes and carrots are perfectly cooked and that gravy is to die for! 

Ingredients

  • 1 lb stew meat (regular or tenderized)
  • 1/2 cup flour
  • 1 tsp salt
  • 2 tbsp butter
  • 2 cups beef broth
  • 2 cups water
  • 1 pkg au jus seasoning mix
  • 1 tsp Worcestershire sauce
  • 1/4 cup ketchup
  • 1 tsp parsley
  • 1 small onion, sliced
  • 2 cups petitie carrots
  • 5 small-medium potatoes

Instructions

  1. Preheat the Instant Pot by setting it to saute HIGH. 
  2. While the Instant Pot is preheating, combine the flour and salt in a large zip top bag.
  3. Add the stew meat to the flour and shake to cover the stew meat.
  4. Once the Instant Pot display reads HOT add the butter to the Instant Pot and allow it to melt.
  5. Once the butter is melted, add in the floured stew meat (discarding the extra flour) and brown the meat.
  6. Once the meat is browned (about 10 minutes) add the beef broth and water. Scrape the bottom of the Instant Pot until all stuck on bits are removed from the bottom of the liner.
  7. Add in the au jus seasoning mix, worchestershire sauce, ketchup and parsley. 
  8. Secure the lid, position the knob to sealing. Cook on manual HIGH. If using tenderized stew meat, cook for 20 minutes. If using regular stew meat, cook for 35 minutes. 
  9. While the stew meat is cooking, prepare the veggies.
  10. When the stew meat is done cooking and the Instant Pot beeps, quick release the pressure.
  11. Add in the veggies and pressure cook on HIGH for an additional 2 minutes. Again, quick release the pressure.
  12. Salt and pepper to taste, and serve! 

Notes

If you’d like the gravy a bit thicker, you can thicken with a simple cornstarch slurry. I personally like the thickness as is.

  1. Question about releasing the pressure following cooking the meat. When I did that it went from releasing steam to releasing the juices from the meat/broth while the pressure continued to release. Thankfully I was in the kitchen and caught it while it happened an put a kitchen towel over the valve so it wouldn’t be everywhere. I’ve never had that happen before. Does it mean that it needs to manual release for a little while before releasing completely? I have a 6 quart pot if that makes any difference.

    Other than that, this recipe was AWESOME. I’ve made a couple other beef stews and this was by far the tastiest and the easiest to make. I loved putting the veggies in at the end. They weren’t mushy like other recipes that call for you to throw it all in together. Any suggestions on the pressure release would be most appreciated! I will definitely be making this one again!

  2. Hi Jessica! Sometimes that happens. Next time, just close the vent back up and let the pot sit for another minute or so before releasing the pressure. 😊glad you still enjoyed the meal!
