Teriyaki Chicken Chopped Salad is (healthy!) summer in a bowl! What I love very most about this salad is that it is so customizable! I love to load mine up with fresh fruit. My kids will eat pretty much any fruit that is put in front of them which makes this salad an automatic winner. The chicken can either be made in the Instant Pot (that’s how I do it!) or in the crockpot. I tend to not be the best planner in the world, so 15 minutes in the Instant Pot is much better for me than 4 hours in the crockpot. Don’t have an Instant Pot yet? The homemade teriyaki sauce/dressing really makes this salad stand out. Made from just 3 simple ingredients, it is sure to be a winner. Soy sauce, crushed pineapple and sugar is all you need! That and the chicken breast go into the Instant Pot or CrockPot. Once the chicken is cooked, slice or shred the chicken to go in to the salad. You’ll thicken the sauce to use as the Teriyaki dressing. Now, the fun part! Toppings.

Teriyaki Chicken Chopped Salad

Teriyaki Chicken Chopped Salad consists of crunchy lettuce, warm teriyaki chicken, fresh pineapple and an array of optional toppings. The salad is finished off with a drizzle of homemade teriyaki dressing.
Ingredients
- 1/2cup soy sauce
- 1/2cup crushed pineapple
- 1/2cup granulated sugar
- 1chicken breast
- 1tbsp butter room temperature
- 1tbsp flour
- lettuce
- salad toppings
Instructions
- Combine the soy sauce, crushed pineapple and sugar in the liner of the Instant Pot (or crockpot). Place the chicken breast in the liquid. The chicken breast should be no thicker than 1 inch. If it is thicker, either cut the breast in half or put the chicken in a zip top bag and use a rolling pin to flatten it a bit.
- Cook on Manual HIGH for 5 minutes. NPR for 5 minutes and then quick release the remaining pressure. Take the chicken out of the Instant Pot and allow it to rest for an additional 5 minutes. If using the crockpot, cook on high for 3-4 hours.
- While the chicken is resting, create a paste with the butter and flour. Turn the Instant Pot onto saute and stir the paste into the sauce. Simmer until the sauce has thickened to your liking.
- Prep the toppings while the chicken is cooking. Chop your lettuce and other toppings. When ready to serve, place toppings and dressing on top of lettuce. Drizzle with the thickened sauce/dressing and serve.
