Taylor Swift Cookie

This KARMA(el) blondie filled with mini kisses is inspired by the kiss that was heard around the world. AKA the absolute *moments* Taylor Swift and Travis Kelce shared during her second night of the Eras Tour in Buenos Aires. Topped with a vanilla cloud frosting (feel free to add a lavender haze to it, if you’d like), a custom sprinkle friendship bracelet, and edible glitter, this cookie is truly bejeweled. 

I’m going to speak now: I’ve never been the biggest Swiftie and I am not the kind of girl who obsesses over anything but cookies, but watching Taylor begin again with Travis? Well, that was the moment I knew everything had changed. This is me trying to reconcile my old reputation with a tribute fit for the queen herself! I knew whatever I busted out had to be incredibly delicious and with a soft, chewy texture this caramel blondie is never going out of style. Topped with all of the tasty extras, it is literally something out of my wildest dreams. The flavor combo is truly, in a word, timeless.

Ingredients in the Taylor Swift X Travis Kelce Cookie

  • Salted butter, melted– if you only have unsalted butter, you can add an extra pinch of salt to the cookie dough and call it good!
  • Brown sugar
  • Granulated sugar
  • Eggs
  • Caramel topping – Use a thicker caramel! 
  • Vanilla extract
  • All-purpose flour
  • Cornstarch – This is going to help the blondies be extremely soft! 
  • Salt
  • Baking soda 
  • Mini baking kisses – I had a bag on hand from last year, but I can’t find them online anywhere. Guittard Milk chocolate chips will work well as a sub! Or you could chop up some regular sized kisses!

Cloud Frosting

  • Cream cheese, cold 
  • Powdered sugar
  • Clear vanilla – You can sub regular vanilla, but it won’t be as clear and it will make your clouds look a little murky. 
  • Heavy whipping cream

Toppings

  • Candy eyeballs
  • Variety of sprinkles – This is so you can make the friendship bracelets! Get as creative as you’d like! I sourced mine from Hobby Lobby, Walmart and Zurchers. 
  • Edible marker – If you’ve never heard of this, don’t worry, I know places you can buy it (Walmart or Hobby Lobby)
  • Edible glitter– I bought mine at Hobby Lobby. If you end up with too much on your cookie, it’s okay, just shake it off. 😉

How to Make Caramel Blondies

  1. Preheat the oven to 350° F. If you fail to plan this step, you plan to fail. 
  2. In the bowl of a stand mixer, combine the melted butter, brown sugar and granulated sugar until well combined.
  3. Reduce the speed to low and add in the eggs, caramel topping and vanilla, mixing until well combined.
  4. Add the flour, cornstarch, salt and baking soda, mixing until a soft dough forms.
  5. Fold in the mini kisses or chocolate chips until evenly distributed.
  6. Portion out the dough into 1/3 cup portions (a heaping #12 scoop), roll into a ball and place in the center of a large round silicone baking mold. (Because these are blondies, like a brownie, we need the pan for them to keep shape, or else they would spread for daaaaayyys).
  7. Bake at 350° F for 12-14 minutes, until the cookies have flattened, spread and are no longer wet and glossy on the top of the cookie. The edges may have started turning golden brown.
  8. Allow the cookies to cool completely in the silicone mold before removing them.
  9. Once completely cool, make the cloud frosting.
  10. To make the cloud frosting, in the bowl of a stand mixer using the whisk attachment, combine the cold cream cheese with the powdered sugar, mixing until smooth.
  11. Once smooth, add the vanilla extract and then slowly add in the heavy cream. Do this sloooooowwwllyyyy so that the cream cheese mixture stays smooth and doesn’t go chunky.
  12. Once all of the heavy cream has been added, turn the mixer up to high speed and allow the mixture to beat until thickened, fluffy and stable.
  13. Either spread the frosting onto each cookie or transfer to a piping bag and pipe dollops of the frosting onto the cookie to resemble a cloud.
  14. Using cooking tweezers, place the sprinkles around the edge of the cookie to resemble a bracelet. Flip the candy eyes backwards so the blank white circle is pointing out. Once the sprinkle bracelet is finished, use the edible black marker to add the letters to the blank space white ‘beads’. I find doing this after they have been added to the cookie is much easier than trying to hold them while writing on them. 
  15. Store in the refrigerator and serve chilled.

Blondie

  • 2 tsp clear vanilla
  • 2 cups heavy whipping cream
