Peanut Butter Nest Cookies

Peanut Butter Bird's Nest Cookies are a fun twist on a classic! These no bake peanut butter cornflake cookies get a fun easter twist thanks to cute little Egg shaped M&M's.

Ingredients

  • 1 cup sugar
  • 1 cup light corn syrup
  • 1 cup creamy peanut butter
  • 1 tsp vanilla
  • 5 cups cornflakes
  • 1/2 cup chocolate chips
  • 1 bag egg shaped peanut butter M&M's

Instructions

  • In a medium sauce pan bring the sugar and light corn syrup to a boil over medium high heat. 
  • As soon as the mixture begins to boil, remove from heat and stir in the peanut butter and vanilla until smooth.
  • Pour over the measured out cornflakes and stir to evenly coat. 
  • Scoop the cornflake cookies out and place them on parchment paper. Shape into a nest either using your fingers (careful! It may be hot!) or the back of a spoon. 
  • Repeat with the remaining cornflake mix.
  • In a microwave safe bowl, melt the chocolate chips by microwaving for 30 second intervals, stirring in between each one, until completely smooth.
  • Spoon the melted chocolate into a piping bag or freezer zip top bag. Snip the corner so there is a very small hole.
  • Drizzle the melted chocolate over the cookies in both directions. 
  • Place 2 or 3 egg shaped peanut butter M&M's into each nest. 
  • Allow to cool on the counter until the chocolate is set, or toss them in the fridge if you are in a hurry.
