In a medium sauce pan bring the sugar and light corn syrup to a boil over medium high heat.
As soon as the mixture begins to boil, remove from heat and stir in the peanut butter and vanilla until smooth.
Pour over the measured out cornflakes and stir to evenly coat.
Scoop the cornflake cookies out and place them on parchment paper. Shape into a nest either using your fingers (careful! It may be hot!) or the back of a spoon.
Repeat with the remaining cornflake mix.
In a microwave safe bowl, melt the chocolate chips by microwaving for 30 second intervals, stirring in between each one, until completely smooth.
Spoon the melted chocolate into a piping bag or freezer zip top bag. Snip the corner so there is a very small hole.
Drizzle the melted chocolate over the cookies in both directions.
Place 2 or 3 egg shaped peanut butter M&M's into each nest.
Allow to cool on the counter until the chocolate is set, or toss them in the fridge if you are in a hurry.
