Chocolate Cookie Dough Sandwiches
Chocolate Cookie Dough Sandwiches are a cookie dough whipped cream sandwiched in between two rich, chewy chocolate cookies. This is a dessert lover's ultimate dream!

Chocolate Cookies
- 2/3 cup butter room temperature
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 egg
- 4 tsp vanilla
- 1 1/2 cup flour
- 1/2 cup cocoa
- 1 tsp baking soda
- 1/2 tsp salt
- 2 tsp cornstarch
Cookie Dough Filling
- 1/4 cup butter room temperature
- 1/8 cup granulated sugar
- 1/4 cup packed brown sugar
- 1 tbsp milk
- 1/2 tsp vanilla
- 1/2 cup flour
- 1/4 tsp salt
- 1/4 cup mini chocolate chips
- 1/2 cup heavy whipping cream
Chocolate Cookies
Preheat oven to 350°.
In the bowl of a stand mixer, combine the butter and sugars. Cream together for 2 minutes.
Scrape down the sides and add in the vanilla and egg. Mix until combined.
Add all of the dry ingredients to the bowl and mix until thoroughly combined.
Use a cookie scoop and scoop the dough onto a parchment paper lined cookie sheet. Bake at 350° for 8 minutes.
As soon as the cookies come out of the oven, use the bottom of a drinking glass and smash the cookies flat. Transfer to a wire cooling rack. Make sure to cool completely.
Cookie Dough Filling
Cream together the butter and sugars.
Scrape sides and add in vanilla and milk.
Mix in the flour and salt until thoroughly combined. Stir in the chocolate chips. Set aside.
Using beaters or the whisk attachment on a stand mixer, whip the whipping cream until stiff peaks form.
Gently and throughly fold the whipped cream and cookie dough together.
Sandwich Assembly
Once the chocolate cookies are completely cool, spread or pipe the cookie dough filling on the backside of a cookie.
Top with a second cookie.
Store in the fridge and serve cold.
