Chocolate Cookie Dough Sandwiches are a cookie dough whipped cream sandwiched in between two rich, chewy chocolate cookies.  This is a dessert lover's ultimate dream!

Ingredients

Chocolate Cookies

  • 2/3 cup butter room temperature
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 4 tsp vanilla
  • 1 1/2 cup flour
  • 1/2 cup cocoa
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp cornstarch

Cookie Dough Filling

  • 1/4 cup butter room temperature
  • 1/8 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1 tbsp milk
  • 1/2 tsp vanilla
  • 1/2 cup flour
  • 1/4 tsp salt
  • 1/4 cup mini chocolate chips
  • 1/2 cup heavy whipping cream

Instructions

Chocolate Cookies

  • Preheat oven to 350°.
  • In the bowl of a stand mixer, combine the butter and sugars. Cream together for 2 minutes.
  • Scrape down the sides and add in the vanilla and egg. Mix until combined.
  • Add all of the dry ingredients to the bowl and mix until thoroughly combined.
  • Use a cookie scoop and scoop the dough onto a parchment paper lined cookie sheet. Bake at 350° for 8 minutes.
  • As soon as the cookies come out of the oven, use the bottom of a drinking glass and smash the cookies flat. Transfer to a wire cooling rack. Make sure to cool completely.

Cookie Dough Filling

  • Cream together the butter and sugars. 
  • Scrape sides and add in vanilla and milk.
  • Mix in the flour and salt until thoroughly combined. Stir in the chocolate chips. Set aside.
  • Using beaters or the whisk attachment on a stand mixer, whip the whipping cream until stiff peaks form.
  • Gently and throughly fold the whipped cream and cookie dough together.

Sandwich Assembly

  • Once the chocolate cookies are completely cool, spread or pipe the cookie dough filling on the backside of a cookie.
  • Top with a second cookie.
  • Store in the fridge and serve cold.
