Creamy Salsa Chicken Dip

Serve this Creamy Salsa Chicken as a dip or make a meal out of it! It makes great tacos inside of a tortilla with rice.

Ingredients

  • 1 chicken breast 1 inch thick
  • 1/2 jar favorite salsa
  • 4 ounces cream cheese room temperature, cut into small cubes
  • 1/2 cup shredded cheese
  • tortilla chips

Instructions

  • Place the chicken breast along with the salsa in the bottom of your Instant Pot. Cook on manual HIGH for 5 minutes. NPR for 5 minutes then quick release.
  • Take the lid off and put the cream cheese in the instant pot. Put the lid back on and wait another 5 minutes. Once the 5 minutes is up, take the lid off, shred the chicken (I like to do this in my stand mixer!) and combine the cream cheese with the salsa sauce. 
  • transfer to an oven safe dish, top with cheese and broil until the cheese is bubbly and melty. Serve with tortilla chips.
  • This chicken is also very good served over rice, like a burrito with rice and beans, on salads or in a quesadilla.
