Instant Pot Chicken Fajitas

Instant Pot Chicken Fajitas are exploding with flavor, extremely fast and easy. The crispy bell peppers and onions paired with the perfectly cooked chicken slices wrapped in a warm tortilla make the fastest, tastiest week-night meal to date!

Ingredients

  • 2 chicken breasts thinly sliced
  • 1 cup water
  • 1 pkg au jus seasoning
  • 1 pkg ranch dressing mix
  • 1 pkg Italian dressing mix
  • 1/2 tsp chili powder
  • 2 bell peppers sliced
  • 1/2 red onion sliced

Instructions

  • Add the water and au jus seasoning mix to the liner of the Instant Pot. Stir to combine. Add in the thinly sliced chicken breast.
  • Lock the lid, set the knob to sealing. Cook on Manual HIGH for 2 minutes. Allow for a 5 minute NPR then quick release the remaining pressure.
  • Discard the liquid in the Instant Pot, reserving about 2 tbsp.
  • Turn the Instant Pot on to Sauté. Add the ranch dressing mix, Italian dressing mix and chili powder to the Instant Pot.
  • Add in the peppers and onions.
  •  Stir to coat the meat, peppers and onions in the seasonings. Continue to sauté until the peppers and onions are cooked to your liking. You may need to add in the reserved liquid in this step if the veggies don't let off a lot of liquid. It really is up to personal preference. 
  • Enjoy wrapped in a warm tortilla with cheese, sour cream, guacamole, cilantro.. really anything you'd like!
