Pico De Gallo
Pico De Gallo is a fresh salsa or Salsa Fresca. The fresh tomato, raw onion, cilantro, fresh lime juice and a hint of jalapeño come together to make a refreshing appetizer or topping.

- 8 roma tomatoes diced small
- 1 small red onion diced small
- 1/4 cup minced canned jalapeños
- 1/2 cup fresh cilantro
- 2 limes
- salt and pepper to taste
In a medium bowl mix together the diced tomatoes, onion and minced jalapeños.
Roughly chop the cilantro and toss together.
Squeeze the juice from both limes into the bowl and mix well. Season with salt and pepper to taste.
Add more cilantro or jalapeño to your liking.
Keeps well in the refrigerator for 3-4 days.
