Easter Slice 'n Bake Sugar Cookies

Easter Slice 'n Bake Sugar Cookies will win over the crowd at any Easter party! The bright colors are so fun and festive!

Ingredients

  • 1 cup butter softened
  • 1 cup sugar
  • 1 egg
  • 2 1/2 tsp vanilla
  • 2 tsp baking powder
  • 3 cups all purpose flour
  • food dye

Instructions

  • Preheat oven to 350°
  • Cream butter and sugar together in stand mixer for 3 minutes.
  • Scrape down sides and mix in egg and vanilla until just combined.
  • Add in the baking powder and flour. The dough should be the consistency of play dough when you are done. Add a little more flour, or a little water if needed. These measurements always work perfect for me.
  • Divide the dough in half. Divide one of the halves into thirds. Dye each third a different color.
  • Using your hand, roll each color into a long snake approx. the same length. Stack them on top of each other and carefully push the dough together. Manipulate it so you are able to again, roll the dough like a snake. 
  • Shape the colorful snake into an egg shape by making the bottom a little larger than the top. 
  • Roll the plain dough out using a rolling pin into a long rectangle. The length of the rectangle should be the same as the length of the snake. 
  • Lay the snake on the edge of the rolled out dough and carefully roll the plain dough around the colorful snake. You should end up only seeing the plain dough on the outside. 
  • Using  a sharp knife, cut the log into 1/4 to 1/2 inch thick cookies. THESE COOKIES WILL NOT SPREAD OR CHANGE SHAPE so cut them to the thickness you'd like your finished cookie to be. 
  • Place on a cookie sheet and bake at 350° for 6-10 minutes, depending on the size and thickness of your cookie. You will want to pull them when the centers look puffy and are no longer glossy. If you wait until they are turning brown, your cookie will be more on the crispy side.
