Ingredients

  • 1/2 cup pineapple juice
  • 1/8 cup honey
  • zest from 1 lime
  • 1/2 lime, juiced

Instructions

  • Start by zesting one lime to obtain the lime zest.
  • Cut the zested lime in half and squeeze the juice from one-half of the lime. You'll need approximately 1/2 of a lime's worth of juice.
  • In a mixing bowl, combine the 1/2 cup of pineapple juice, 1/8 cup of honey, lime zest, and the lime juice you've just extracted.
  • Whisk the ingredients together thoroughly until the honey is fully incorporated, and the dressing has a smooth consistency.
  • Taste the dressing and adjust the sweetness or tartness by adding more honey or lime juice, as needed, to suit your preference.
  • Once you've achieved the desired balance of flavors, the fruit salad dressing is ready to use.
  • Drizzle the dressing over your fruit salad just before serving. Toss the salad gently to ensure the dressing coats the fruit evenly.
