Chicken Chow Mein

Chicken chow mein is one of those dishes that I always order at restaurants, but never make at home - until now!

Ingredients

  • 10 oz bag 'super blend' veggies with brussels sprouts, cabbage, broccoli, carrots, and kale
  • 2 cups diced rotisserie chicken
  • 14.2 oz stir-fry noodles, precooked
  • 1 tbsp hoisin sauce
  • 2 tbsp teriyaki sauce
  • 1/4 cup soy sauce
  • 1/8 tsp sesame oil
  • 1/2 tsp garlic powder
  • salt and pepper, to taste

Instructions

  • In a large skillet, heat a small amount of cooking oil over medium-high heat.
  • Add the 'Super Blend' veggies to the skillet. Stir-fry them for about 3-5 minutes or until they become tender. You can cover the skillet to help steam them, stirring occasionally.
  • Once the veggies are tender, push them to one side of the skillet.
  • Add the diced rotisserie chicken to the other side of the skillet. Cook for 2-3 minutes or until the chicken is heated through and slightly browned.
  • Combine the cooked chicken and veggies in the skillet.
  • Add the pre-cooked stir-fry noodles to the skillet and gently toss them with the chicken and veggies.
  • In a small bowl, mix together the hoisin sauce, teriyaki sauce, soy sauce, sesame oil, and garlic powder.
  • Pour the sauce mixture over the chicken, veggies, and noodles in the skillet. Stir well to ensure everything is coated evenly.
  • Cook for an additional 2-3 minutes, allowing the flavors to meld and the dish to heat through.
  • Season the Chicken Chow Mein with salt and pepper to taste. Adjust the seasoning according to your preferences.
  • Once everything is heated and well combined, remove the skillet from the heat.
  • Serve your homemade Chicken Chow Mein hot. You can garnish it with sesame seeds or sliced green onions for extra flavor and presentation. Enjoy!
