In a shallow bowl or pie plate, add the eggs, milk, sugar and vanilla. Whisk until thoroughly combined.
Spray the griddle with nonstick spray.
Quickly dip one side of a slice of bread into the egg mixture and then flip over, dipping the other side of the bread before placing on the hot griddle.
Repeat this step until the griddle is full of French toast.
Cook until golden brown. Flip the French toast and then cook again until golden brown.
Repeat steps 3-7 until all of the egg mixture has been used up.
Serve with syrup, powdered sugar, or whipped cream and fresh fruit.
Notes
For every egg you use, you should be able to make about 4 pieces of french toast. So you can do some simple math to figure out how many pieces you want and be able to adjust this recipe accordingly.
