Hawaiian Chicken Recipe

Another week, another easy rotisserie chicken dinner! This hawaiian chicken recipe is about to become your summer anthem.

Ingredients

  • 2 cups diced rotisserie chicken (or other cooked chicken)
  • 1 cup red bell pepper, diced
  • 1 cup diced pineapple
  • 1/2 cup pineapple juice
  • 1/2 cup soy sauce
  • 1/4 cup water
  • 1/4 cup granulated sugar
  • 1/4 tsp ground ginger
  • 1 tsp garlic
  • 1 tbsp cornstarch

Instructions

  • In a large skillet over medium heat, cook the bell pepper with a little oil until almost tender.
  • Add in the diced rotisserie chicken and diced pineapple. Continuing to stir every once in a while until heated through.
  • In a separate bowl, combine the pineapple juice, soy sauce, water, granulated sugar, ginger, garlic and cornstarch. Whisk until combined.
  • Pour the liquid into the pan with the pepper, pineapple and chicken. The sauce will thicken and coat the dish. Stir to cover evenly.
  • Serve over rice and enjoy!
