Hawaiian Chicken Recipe
Another week, another easy rotisserie chicken dinner! This hawaiian chicken recipe is about to become your summer anthem.

- 2 cups diced rotisserie chicken (or other cooked chicken)
- 1 cup red bell pepper, diced
- 1 cup diced pineapple
- 1/2 cup pineapple juice
- 1/2 cup soy sauce
- 1/4 cup water
- 1/4 cup granulated sugar
- 1/4 tsp ground ginger
- 1 tsp garlic
- 1 tbsp cornstarch
In a large skillet over medium heat, cook the bell pepper with a little oil until almost tender.
Add in the diced rotisserie chicken and diced pineapple. Continuing to stir every once in a while until heated through.
In a separate bowl, combine the pineapple juice, soy sauce, water, granulated sugar, ginger, garlic and cornstarch. Whisk until combined.
Pour the liquid into the pan with the pepper, pineapple and chicken. The sauce will thicken and coat the dish. Stir to cover evenly.
Serve over rice and enjoy!
