Fruit Salad

This stunning fruit salad takes the natural sweetness of your favorite fruits and heightens it, creating an irresistable side.

Ingredients

  • 1 1/2 cups strawberries, hulled and cut
  • 1 1/2 cups blueberries
  • 1 1/2 cups raspberries
  • 1 1/2 cups red grapes
  • 4 kiwis, peeled and cut
  • 1 cup cut fresh pineapple
  • 1 can (small) mandarin oranges, juices drained
  • 1 cup blackberries
  • 1/2 cup pineapple juice
  • 1/8 cup honey
  • zest of 1 lime
  • 1/2 lime, juiced

Instructions

  • Wash, cut and prepare the fruit and place in a large bowl.
  • In a small container, combine the pineapple juice, honey, lime zest and lime juice. Whisk until smooth.
  • Pour over the bowl of fruit and toss to combine.
  • Store in the fridge. Best if eaten within the first 24 hours.
