Ground Beef Soup (Hamburger Vegetable Soup)
This Hamburger Soup Recipe is full of beefy flavor, veggies, potatoes and, of course, ground beef. This hearty soup is both easy and inexpensive to make.
Servings: 8 servings
- 2 lbs ground beef
- 4 14 oz cans beef broth
- 2 pkg au jus mix
- 1 1/2 tbsp minced onion dried
- 2 cups diced potatoes
- 2 cups frozen mixed peas & carrots
- 3 tbsp butter melted
- 3 tbsp flour
Brown the ground beef in a large pot. Drain off any excess grease.
Add the beef broth and bring to a simmer.
Once simmering, add the au jus packets, minced onion, and diced potatoes. Simmer for 5-7 mintues, until potatoes are tender.
Add frozen peas and carrots and simmer for another minute or two.
In a small bowl, stir together the melted butter and flour to create a paste.
Add the paste to the simmering pot on the stove and stir until the stew has thickened.
