White Chocolate Covered Strawberry Ghosts

Chocolate dipped strawberries are usually seen as a romantic dessert between lovers, but with this fun festive twist, you can turn them into a family-friendly and spooky treat. Ghostly white chocolate covered strawberries are both fun and easy to make!

Ingredients

  • 1 pint strawberries washed and dried
  • 1 cup white dipping chocolate, almond bark or white chocolate chips
  • 1 tbsp shortening or coconut oil if using chocolate chips
  • mini chocolate chips

Instructions

  • Instant Pot Instructions: Pour approx 2 cups of water into the bottom of the Instant Pot liner. Place a glass bowl on top of the liner. The bottom of the bowl should just fit inside of the Instant Pot, the top should be above the top of the liner.
  • Place the chocolate (and shortening/coconut oil if using chocolate chips) in the bowl. *see post for more details on this*
  • Set the Instant Pot to Saute NORMAL.
  • Stir chocolate occasionally until smooth, about 10-15 minutes. After the chocolate is smooth, press cancel and then hit the keep warm button.
  • Dip strawberries in chocolate, covering almost to the stem. Place covered strawberries on a parchment paper lined baking sheet. 
  • Immediately place mini chocolate chips onto the strawberries for the mouth and eyes.
  • Either allow to dry at room temperature or toss in the fridge (30 min) or freezer (15 min). Will keep in the fridge for 2 days or in the freezer for 2 months.
  • Microwave Instructions: microwave chocolate (and shortening/coconut oil if using chocolate chips) in a glass bowl. Microwave for 30 seconds at a time until completely melted, stirring at each 30 second mark. 
  • Dip strawberries in chocolate, covering almost to the stem. Place covered strawberries on a parchment paper lined baking sheet. 
  • Immediately place mini chocolate chips onto the strawberries for the mouth and eyes.
  • Either allow to dry at room temperature or toss in the fridge (30 min) or freezer (15 min). Will keep in the fridge for 2 days or in the freezer for 2 months.

Notes

Sometimes with the drastic change in heat the glass bowl will get 'stuck' in the metal liner of the Instant Pot once the sauce function has been turned off. If this happens, simply turn the saute function back on and within about 3-5 minutes the glass bowl will be loose again. Make sure to handle the glass bowl with hot pads! It will be hot!
