Meatball Sub Burgers

Ingredients

  • 1 lb ground beef
  • 1 cup plain bread crumbs
  • 2 eggs
  • 1/2 cup grated parmesan cheese
  • 1 tbsp dried parsely
  • 1/2 tsp salt
  • 1/8 tsp pepper
  • 1/2 cup marinara sauce divided
  • 8 slices mozzeralla cheese
  • English Muffins

Instructions

  • Use an electric hand mixer to combine the ground beef, bread crumbs, eggs, parmesan cheese, parsley, salt, pepper and 2 tbsp of the marinara sauce.
  • Use about 3 tbsp of meat and form into patties.
  • Quickly brown both sides of all of the patties, we aren't looking to cook these all the way through right now, just a nice sear on both sides. (I do this in my Instant Pot)
  • Place a slice of mozzarella cheese onto each browned patty and then spoon some marinara sauce on top of the cheese. Now, either bake your patty's or pressure cook them in the Instant Pot.
  • To bake the patties, cook them in the oven at 350° for about 15 minutes, or until internal temperature reads 160°
  • If using your pressure cooker, place all of the cheese and sauce topped patty's into a steamer basket (it is fine to stack them! Trust me!) and cook on HIGH pressure for 10 minutes. Quick release the Instant Pot when the cook time is over. 
  • Toast your English Muffins, make your burger and dig in!
