Chocolate Cookies

Chocolate Cookies are a rich chocolate cookie filled with chocolate chips. These Chocolate Cookies are thick, chewy, and soft. They almost taste like a brownie! Eat the cookies alone or top them with some ice cream, either way you've got the best chocolate cookie ever!

Ingredients

  • 1/2 cup butter
  • 1/4 cup shortening
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 egg
  • 2 tsp vanilla
  • 1 1/2 cup flour
  • 1/2 cup cocoa
  • 2 tsp corn starch
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cups assorted chocolate chips

Instructions

  • Preheat the oven to 350°.
  • In the bowl of a stand mixer, combine the butter, shortening and sugars. Mix on high speed for 3 minutes.
  • Scrape down the sides and then add in the egg and vanilla. Mix well.
  • Add the dry ingredients (flour, cocoa, corn starch, baking soda, and salt) to the bowl and slowly mix until just combined. Do not over mix.
  • Fold in the chocolate chips. (I like to use mini chocolate chips, and regular sized milk chocolate chips!)
  • Scoop the dough into balls and place on a cookie sheet that is lined with parchment paper. Flatten cookies a bit with your fingers.
  • Bake at 350° for 8-10 minutes or until no longer glossy on the top. 
  • Take out of the oven and let the cookies cool on the pan for 5 minutes before transferring to a wire rack.
