Snickerdoodle Muffins

Snickerdoodle Muffins are an easy, vanilla muffin baked and then dunked in melted butter and cinnamon and sugar. The end result is absolutely mouth watering! The Cinnamon flavored Muffin will be a new family favorite!!

Ingredients

  • 1/2 cup butter divided
  • 1 1/2 cups granulated sugar divided
  • 1 egg
  • 1 tbsp vanilla
  • 1 cup milk
  • 2 cups flour
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon

Instructions

  • Preheat the oven to 325°. Spray a mini muffin tin liberally with non-stick spray, set aside.
  • Cream together 3 tbsp of butter, 1 cup of sugar, vanilla and egg until well combined.
  • Add in the milk. Mix thoroughly.
  • Add in the flour, baking powder and salt.
  • Scoop the batter into the prepared muffin tin.
  • Bake at 325° for 12-15 minutes or until a toothpick comes out clean.
  • Let the muffins cool for 5-10 minutes.
  • While the muffins are cooling, melt the remaining butter and stir together the remaining 1/2 cup of sugar and 1 tsp cinnamon.
  • When the muffins are cool enough to handle, carefully remove a muffin, roll in the melted butter and then roll in the cinnamon and sugar mixture. Repeat with remaining muffins.
  • Best served warm!
