Homemade Blueberry Fritters

Homemade Blueberry Fritters are a fluffy, fried doughnut filled with fresh blueberries. The fritters are covered with vanilla glaze to take things to the next level! Perfect for breakfast, brunch or a snack!

Ingredients

Fritter Batter

  • 1 tbsp butter melted
  • 1/4 cup sugar
  • 2 eggs
  • 1 cup flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 cup milk
  • 1 1/2 cups fresh blueberries

Glaze

  • 1/4 cup butter
  • 1 1/2 cup powdered sugar
  • 1 tsp vanilla
  • 1 1/2 tbsp milk

Instructions

  • With a hand mixer combine the melted butter, sugar and eggs until smooth.
  • Sift together the flour, baking powder and salt. Add to the egg mixture. Batter will be thick.
  • Use the hand mixer and add in the milk, this will thin the batter quite a bit. 
  • Fold in the blueberries.
  • Heat the oil in a deep skillet until it reaches 340-350°.
  • Drop 1/4 cup batter into the hot oil and fry on each side until brown. Repeat with remaining batter.
  • To make the glaze, beat all ingredients together until smooth. Spoon the glaze onto each fried fritter.

Notes

You can check the inside of the fritter by inserting a toothpick. If the inside still isn't cooked through, return to the oil. Having undercooked fritters can mean that your oil is too hot.
