Homemade Blueberry Fritters are a fluffy, fried doughnut filled with fresh blueberries. The fritters are covered with vanilla glaze to take things to the next level! Perfect for breakfast, brunch or a snack!
With a hand mixer combine the melted butter, sugar and eggs until smooth.
Sift together the flour, baking powder and salt. Add to the egg mixture. Batter will be thick.
Use the hand mixer and add in the milk, this will thin the batter quite a bit.
Fold in the blueberries.
Heat the oil in a deep skillet until it reaches 340-350°.
Drop 1/4 cup batter into the hot oil and fry on each side until brown. Repeat with remaining batter.
To make the glaze, beat all ingredients together until smooth. Spoon the glaze onto each fried fritter.
Notes
You can check the inside of the fritter by inserting a toothpick. If the inside still isn't cooked through, return to the oil. Having undercooked fritters can mean that your oil is too hot.
