Chicken Hawaiian Haystacks Recipe

Easy Hawaiian Haystacks is a family favorite Dinner Recipe! A creamy chicken gravy served over rice topped with diced chicken and all sorts of toppings! Mandarin Oranges, pineapple, olives, green onions, carrots, and (my favorite) Chow Mein noodles. This is a dinner everyone will love!

Ingredients

  • 3 cups chicken broth
  • 2 small cans cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 4 cups diced rotisserie chicken

Topping Ideas

  • shredded cheese
  • green onions
  • olives
  • mandarin oranges
  • pineapple chunks
  • chow mein noodles
  • cooked rice to serve

Instructions

  • In a sauce pan over medium heat, whisk together the chicken broth, cream of chicken soup, sour cream and diced chicken.
  • Cook until bubbling and heated through.
  • Add the shredded cheese to the mixture and stir until melted.
  • Serve over a bed of rice with your desired toppings.

Notes

If using chicken breasts, I would suggest cutting the chicken breast into 'tender sized' strips and then following the directions as written.
