Turn the Instant Pot on to the saute function. Heat honey until it starts to bubble.
Add the strawberries to the Instant Pot. Let the honey bubble until it takes on a pink color.
Turn off the instant pot, secure lid in place. Cook on Manual HIGH for 1 minute. 10 min NPR then QR.
Remove 1/4 cup of the liquid from the Instant Pot and thoroughly mix in the cornstarch. Turn the Instant Pot onto saute and whisk in the cornstarch slurry to the strawberry mixture and boil until it thickens to your liking. (If you like it super thick, I'd add more cornstarch. Remember, it will thicken some when it is refrigerated!)
Turn off the Instant Pot and let it cool completely. Transfer to a small container and keep refrigerated. This will stay fresh for 1-2 weeks. (if it lasts that long.)
