Instant Pot Strawberry Jam

Ingredients

  • 1 lb strawberry hulled, quartered
  • 1 cup honey
  • 1 tbsp cornstarch

Instructions

  • Turn the Instant Pot on to the saute function. Heat honey until it starts to bubble. 
  • Add the strawberries to the Instant Pot. Let the honey bubble until it takes on a pink color.
  • Turn off the instant pot, secure lid in place. Cook on Manual HIGH for 1 minute. 10 min NPR then QR.
  • Remove 1/4 cup of the liquid from the Instant Pot and thoroughly mix in the cornstarch. Turn the Instant Pot onto saute and whisk in the cornstarch slurry to the strawberry mixture and boil until it thickens to your liking. (If you like it super thick, I'd add more cornstarch. Remember, it will thicken some when it is refrigerated!)
  • Turn off the Instant Pot and let it cool completely. Transfer to a small container and keep refrigerated. This will stay fresh for 1-2 weeks. (if it lasts that long.)

Notes

Please note: The honey and strawberries are BOTH the stars of this recipe, so you will be able to taste the honey coming through in the final product. If you are not a honey fan, this recipe may not be for you. :)
**If doubling the recipe or using the 3qt Instant Pot, NPR for a tad longer. Some people have reported liquid spewing while doubling the recipe. It will not hurt to do a full NPR if you are worried about it.**
NPR- natural pressure release. This means, after the time has expired and the Instant Pot has beeped, allow the timer to count up until the desired time has been reached before releasing the pressure manually.
QR- quick release. Turning the knob to manually release the pressure.
