Chocolate Cookies
Chocolate Cookies are a rich chocolate cookie filled with chocolate chips. These Chocolate Cookies are thick, chewy, and soft. They almost taste like a brownie! Eat the cookies alone or top them with some ice cream, either way you've got the best chocolate cookie ever!

Servings: 2 dozen
- 1/2 cup butter
- 1/4 cup shortening
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 1 egg
- 2 tsp vanilla
- 1 1/2 cup flour
- 1/2 cup cocoa
- 2 tsp corn starch
- 1 tsp baking soda
- 1/2 tsp salt
- 1 1/2 cups assorted chocolate chips
Preheat the oven to 350°.
In the bowl of a stand mixer, combine the butter, shortening and sugars. Mix on high speed for 3 minutes.
Scrape down the sides and then add in the egg and vanilla. Mix well.
Add the dry ingredients (flour, cocoa, corn starch, baking soda, and salt) to the bowl and slowly mix until just combined. Do not over mix.
Fold in the chocolate chips. (I like to use mini chocolate chips, and regular sized milk chocolate chips!)
Scoop the dough into balls and place on a cookie sheet that is lined with parchment paper. Flatten cookies a bit with your fingers.
Bake at 350° for 8-10 minutes or until no longer glossy on the top.
Take out of the oven and let the cookies cool on the pan for 5 minutes before transferring to a wire rack.
