Pulled Chicken Sandwiches

Pulled Chicken Sandwiches are a regular meal at my house. They're delicious, full of protein, and SO quick and easy to make!

Ingredients

  • 1 rotisserie chicken breast or 2 cups cooked chicken
  • 1/2 cup bbq sauce
  • 1/4 cup chicken broth
  • 2 tbsp white vinegar
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/8 tsp black pepper
  • 1/4 cup brown sugar
  • 12 hawaiian rolls*
  • 3 tbsp butter
  • 3 slices cheddar cheese

Instructions

  • Break your rotisserie chicken breast into a few smaller portions. This will help the chicken heat up faster.
  • Add the bbq sauce, chicken broth, white vinegar, garlic powder, salt and black pepper to a large pan. Whisk to combine.
  • Place the cooked chicken into the pan.
  • Heat the the pan over medium low heat for 5-10 minutes, until the chicken is heated through.
  • Remove the chicken and shred with two forks.
  • While the chicken is removed, add the brown sugar to the pan and stir until the sugar has melted, the sauce will no longer feel gritty.
  • Return the shredded chicken to the pan and toss to coat in the BBQ sauce.
  • Place the lid on the pan and turn the heat off.
  • Cut the Hawaiian rolls in half and butter the insides of the rolls.
  • Broil in your oven until golden brown.
  • Evenly distribute the shredded chicken onto the bottom half of the Hawaiian roll.
  • Top with the slices of cheddar cheese and then put the top of the Hawaiian rolls on to complete the sandwich.
  • Serve warm + enjoy!

Notes

*You can alternately use 4 hamburger buns if you'd prefer.
