- 2 1/2 cups pancake mix
- 1/2 cup sugar
- 1 egg
- 1/4 cup lemon juice
- 1 tbsp lemon zest
- 1/2 cup milk
- 1/4 cup melted butter
- 2 tsp poppy seeds
Preheat your oven to 400°F degrees.
Take the large bowl and then measure out and dump the pancake mix, sugar, egg, lemon juice, milk, butter and lemon zest into the bowl.
Mix everything together until there are no more dry pancake mix spots.
Fold in the poppy seeds by making circle motions with the spoon until they look like they’ve been mixed in well.
Using a small spoon separate the batter into 12 paper lined muffin tins.
Bake at 400°F degrees for 12-15 minutes.
