Twice Baked Potatoes are now super fast and easy thanks to my trusty friend the Instant Pot, or electric pressure cooker! The potatoes are perfectly cooked every time in the Instant Pot. The insides are soft and fluffy, perfect for the twice baked potato filling! Make these plain and simple or load them up!

Twice Baked Potatoes 

Twice Baked Potatoes were one of my favorites growing up. My mom didn’t make them too often (but can anyone blame her?? There were 6 of us kids and we all could inhale these bad boys!), when she did though, it was a great night. 

I loved how fluffy and cheesy the filling was, how the very tops of the potatoes were slightly crispy from being broiled.. mmmhhmmm. That is what I call perfection! 

What are Twice Baked Potatoes

Twice Baked Potatoes are literally their name.. potatoes that are baked twice! The first bake is classically done in the oven, the potatoes covered with foil, baked for an hour or so. The second bake happens after the potatoes have been cut in half, the insides scooped out and mashed (with lots of mix ins) and then spooned back into the potato skin.

How to make Twice Baked Potatoes (Instant Pot and classic instructions)

In order to make the Twice Baked Potatoes we need to start with regular baked potatoes. If you do not have and Instant Pot, or Electric Pressure Cooker I will include the classic directions below. (also, you should really get one. 😉)

To bake a potato in the oven, use a fork to poke some holes into the washed potato, cover with aluminum foil and then bake in the oven at 350° for about 1 hour, until they are soft when gently squeezed. You can bake as many as you’d like in the oven at one time.

When they are done, pull the potatoes out of the oven. Cut each potato in half lengthwise. Hold the potato half in a dishrag while scooping out the insides of the potato. This helps to keep your hands safe and cool as well as helps prevent the skin from ripping.

Repeat with all of the potato halves. Skip down to the Twice Baked Potato Filling section.

Instant Pot instructions: If using the Instant Pot, this is how you will do it. 

First wash your potatoes really, really well. Cut each potato in half, lengthwise. Pour 1 cup of water into the bottom of the Instant Pot and then either stack the potato halves onto the trivet or in a steamer basket, as pictured below.

Cook on Manual HIGH for 10 minutes with a 5 minute NPR. 

NOTE: These were not huge potatoes, they easily fit in the palm of my hand. Using larger potatoes will cause the need for the cook time to increase.

When they are done in the Instant Pot, pull them out one at a time. Hold the potato half in a dishrag while scooping out the insides of the potato. This helps to keep your hands safe and cool as well as helps prevent the skin from ripping.

Using a spoon, gently scrape and scoop the insides of each potato out and into a large bowl.

What is in Twice Baked Potato Filling?

This is where the magic really happens! You get to be as creative as you want! You’ll basically take the insides of the potato and make them into mashed potatoes. 

If you are looking for a simple and classic filling, here are some add in ideas:

  • butter
  • milk
  • salt
  • pepper
  • shredded cheese

If you are looking for a more creative and ‘loaded’ Twice Baked Potato, here is what we like:

  • butter
  • cream
  • salt
  • pepper
  • chives
  • bacon
  • shredded cheese

Use a spoon or small rubber spatula to fill each potato skin up with the mashed potatoes filling. 

Arrange on a cookie sheet or other baking pan. Broil until golden brown on top. The time will vary greatly from oven to oven and browning preference.

Can Twice Baked Potatoes be made ahead of time?

Yes!! You can make these the day before need, easily. Follow the directions in the recipe card below right up until you would broil the potatoes. Instead of broiling, cover the potatoes and refrigerate them. To reheat, bake In the oven at 350° for approx 30 minutes or until heated through. 

If planning on making ahead of time, I would suggest leaving the bacon bits out of the filling and instead sprinkling them top after they have been warmed through.

Twice Baked Potatoes

Twice Baked Potatoes are now super fast and easy thanks to my trusty friend the Instant Pot, or electric pressure cooker! The potatoes are perfectly cooked every time in the Instant Pot. Cook Time: 20 minutes
Total Time: 30 minutes
Servings: 8

Ingredients 

  • 8 small/medium russet potatoes, washed
  • 1 cup water, if using the Instant Pot
  • 1/4 cup butter
  • 1/4 cup sour cream
  • 1/4 cup cream or milk
  • 1/4 cup chives, thinly sliced
  • 1/2 cup bacon crumbles
  • 1/2 cup shredded cheddar cheese
  • salt and pepper to taste

Instructions 

  • If baking the potatoes in the oven, poke each potato with a fork, wrap in foil and bake at 350° for about 1 hour or until they are soft to the touch. Let the potatoes cool slightly before unwrapping and cutting each potato in half lengthwise. Skip to step 6. 
  • For the Instant Pot: Cut each potato in half, lengthwise. Place the potatoes in steamer basket, if you have one. 
  • Pour the water into the liner of the Instant Pot. Place the steamer basket with the potatoes into the Instant Pot, or stack the potatoes onto the trivet. 
  • Cook on Manual HIGH for 10 min with a 5 min NPR. **Keep in mind, the potato halves should fit in your hand easily. If your potatoes are larger, the cook time will need to be increased by about 5 minutes. 
  • Release the pressure and remove the potatoes. 
  • Hold each potato half in your hand with a dish towel and gently spoon out the inside of the potato into a bowl. Repeat with all potato halves. 
  • Set the potato skins aside.
  • Add the butter, milk/cream, and sour cream to the bowl with the potatoes. Mash. 
  • Fold the chives, bacon and shredded cheese into the mashed potatoes. 
  • Spoon the mashed potato filling into each potato skin and line in an oven safe dish.
  • Broil until the tops of the potatoes are golden brown. The time frame here will really depend greatly on your oven. 
  • Serve immediately. Store leftovers in the fridge.

    Thank you for your timely post! This year, I was selected to make the holiday potatoes for our large family group. Always looking for non-boring potato recipes to cook. Before your recipe email hit, I was considering making twice baked potatoes but dreading the long cook time. Thank you for being psychic and sending everyone’s way. I’m going to make these in the IP as a trial run, and I’m sure they’ll be fantastic!

    We unfortunately used Yukon golds and the skin got too soft to make a shell 😖 On the positive side though, we mixed the chopped potatoes and skins with the filling, put in a casserole dish, topped with cheese and put under the broiler. Then garnished with bacon and chives. Best Loaded Baked Potatoes Casserole ever!
