Chilly Fall Days Call for Cinnamon Muffins.. SNICKERDOODLE STYLE!

I think today was the first real, honest to goodness, dreary fall day around here. Both in weather and slightly in mood.

One of my very good friends keeps getting knocked down by life and today was a hard blow. I’ve been thinking about her, praying for her and hoping for her. Today was a rough one for me emotionally- It is so hard to watch a loved one go through trials without being able to fix and help.

I am a helper by nature and I strive to make people’s lives happier and easier. The one way I figured I might be able to do some good today was to bake and take over a treat, drink and (thanks to Chase insisting) some flowers.

These little Snickerdoodle Muffins made their out-of-my-home debut today and were a hit with the babies, toddlers, kids, teenagers, moms and grandma’s! They are lick your fingers good.

So, wanna know the secret to the deliciousness? They aren’t healthy. Not one bit. 

But we all need a totally sinfully delicious treat every now and then. Plus these are mini muffins. Which means you can eat 5. ?

I’m not saying that these muffins are a cure all, but they are pretty darn close. They are guaranteed smile worthy, which is a miracle sometimes. ❤️

How to make Cinnamon Snickerdoodle Muffins

The batter is a very simple and easy vanilla muffin batter. In the batter there is melted butter, sugar, an egg, lots of vanilla,  milk, flour, baking powder and salt.

See, basic ingredients that everyone has on hand, pretty much all the time!

Spray your mini muffin tin with non-stick spray, generously. You don’t want these babies sticking!

Then scoop the batter into the muffin tins. The batter will be thick and will rise some when baking. Fill almost all the way full.

Bake at 325° for 15 minutes, or until they pass the toothpick test! 15 minutes seems to be right on target for me and my oven, though.

Pull the muffins out of the oven when they are cooked through. Let the muffins sit and rest for 5-10 minutes before handling.

Melt some butter and mix together the cinnamon and sugar while the muffins are chilling out.

When the muffins are cool enough to handle, carefully remove a muffin from the tin, roll into the melted butter and then roll into the cinnamon and sugar mixture.

Set on a clean cookie sheet to cool and repeat with the remaining muffins.

Make sure to lick your fingers afterwards. Channel that inner child and DO IT!

Best served warm, but are equally as delicious cool.

Ingredients

  • 1/2 cup butter, divided
  • 1 1/2 cups granulated sugar, divided
  • 1 egg
  • 1 tbsp vanilla
  • 1 cup milk
  • 2 cups flour
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon

Instructions

  1. Preheat the oven to 325°. Spray a mini muffin tin liberally with non-stick spray, set aside.
  2. Cream together 3 tbsp of butter, 1 cup of sugar, vanilla and egg until well combined.
  3. Add in the milk. Mix thoroughly.
  4. Add in the flour, baking powder and salt.
  5. Scoop the batter into the prepared muffin tin.
  6. Bake at 325° for 12-15 minutes or until a toothpick comes out clean.
  7. Let the muffins cool for 5-10 minutes.
  8. While the muffins are cooling, melt the remaining butter and stir together the remaining 1/2 cup of sugar and 1 tsp cinnamon.
  9. When the muffins are cool enough to handle, carefully remove a muffin, roll in the melted butter and then roll in the cinnamon and sugar mixture. Repeat with remaining muffins.
  10. Best served warm!

  1. Hey Karli… I made these today for my son and I and it was a huge hit! What cute little muffins and I love them rolled in cinnamon and sugar. I added more cinnamon because well…I like it that way! Such a cute idea.

    These are literally my favorite muffins that have ever been. I love them, my kids love them and so do my kids! We make these very regularly for breakfast and then continue eating them for the rest of the day. For sure a must try.
