Instant Pot Strawberry Jam is made of 3 simple ingredients, strawberries, honey and cornstarch. This jam is so easy and tasty!

 

 


Okay, quick funny story, then we will talk jam. Mmmmkay? Good. A few nights ago I was cooking up dinner and, as always, my kiddos were on the other side of the bar watching and helping. (I’m working on a post all about kids helping out in the kitchen- watch for it!)

I got into the cupboard to get out a bowl, things shifted when I opened the door and out slid a heavy duty glass container and headed straight for the tile. Yup, you already know what happened. Shattered. Everywhere.

I had no shoes on either. *facepalm* My 4 year old, Chase, ran and got me some shoes and tossed them over the counter to me. Then I dug deep to my gymnastics roots and jumped backwards up onto the counter by the sink in one go. (I know, they begged me to join the olympics but what can I say?) I rinsed my feet off, put on my shoes and got to cleaning up the mess.

That’s not even the best part of the story. The best part is, I was lectured by my sweet Chase the entire time I was cleaning up!

“Mom, you have to throw that away now.” “Mom, your never going to be able to use that again.” “Mom, you’ve got to be more careful next time.”

…it’s safe to say, I may be rethinking my parenting after this experience. Okay, I kid, I kid. But for real though, sometimes I forget that kids are kids and they make mistakes just like the rest us.

You know what was not a mistake though? This jam.

This jam’s ingredient list is going to surprise you. The taste will surprise you too. When it was all finished and done Chase kindly asked if he could have a bowl for himself, please. (He was slightly bummed when I explained that you, in fact, didn’t eat jam out of a bowl like you would some yogurt. We settled for a spoonful and then some on a slice of bread.) ANYWAY, let’s jam.

You will need to hull and quarter your strawberries. Do you have one of these hullers? My husband gave this to me for my birthday last year and its honestly one of my favorite kitchen gadgets. If you don’t have one, get one. You can find one here.

Okay, you are going to warm some honey in your instant pot until it starts to bubble. Toss in your strawberries, or really any berry would do!

Let the honey bubble until the honey has started to turn pink. At this point you will add the lid and cook on manual HIGH for 1 minute.

Let the Instant Pot naturally release for 10 minutes before quick releasing the pressure.  Remove about 1/4 C of the liquid and make a cornstarch slurry with it.

Turn the Instant pot back onto saute and whisk in the cornstarch slurry. The strawberries should break up on their own while whisking, no blender necessary.

Once the jam is thickened to your liking (remember, it will thicken even more when it is cool!) turn off the Instant Pot and allow the jam to cool completely. Transfer to a small container and keep in the fridge for 1-2 weeks.

**If doubling the recipe or using the 3qt Instant Pot, NPR for a tad longer. Some people have reported liquid spewing while doubling the recipe. NPR for a longer time will help eliminate this problem. It will not hurt to do a full NPR if you are worried about it.**

Instant Pot Strawberry Jam

Instant Pot Strawberry Jam is made of three simple ingredients comes together quickly and is absolutely delicious! This Instant Pot Jam is the perfect addition to toast, biscuits or ice cream!
Prep Time: 5 minutes
Cook Time: 20 minutes
Total Time: 25 minutes

Ingredients 

  • 1 lb strawberries, hulled, quartered
  • 1 cup honey
  • 2 tsp cornstarch

Instructions 

  • Turn the Instant Pot on to the saute function. Heat honey until it starts to bubble. 
  • Add the strawberries to the Instant Pot. Let the honey bubble until it takes on a pink color.
  • Turn off the instant pot, secure lid in place. Cook on Manual HIGH for 1 minute. 10 min NPR then QR.
  • Remove 1/4 cup of the liquid from the Instant Pot and thoroughly mix in the cornstarch. Turn the Instant Pot onto saute and whisk in the cornstarch slurry to the strawberry mixture and boil until it thickens to your liking. (If you like it super thick, I'd add more cornstarch. Remember, it will thicken some when it is refrigerated!)
  • Turn off the Instant Pot and let it cool completely. Transfer to a small container and keep refrigerated. This will stay fresh for 1-2 weeks. (if it lasts that long.)

Notes

Please note: The honey and strawberries are BOTH the stars of this recipe, so you will be able to taste the honey coming through in the final product. If you are not a honey fan, this recipe may not be for you.

NPR- natural pressure release. This means, after the time has expired and the Instant Pot has beeped, allow the timer to count up until the desired time has been reached before releasing the pressure manually.
QR- quick release. Turning the knob to manually release the pressure.

  1. Either will work- they both use the same measurements. Liquid is a bit easier but a dry measuring cup will work, too.
