Can you believe that it is already here? Today is the last day of the 12 Days of Christmas Cookies! I hope you have enjoyed all of these new cookies recipes, and more importantly I hope you will use a couple of them! I sure had a blast creating and testing these recipes. (read: eating at least 5 of each and every one of these cookies!)

Hot Chocolate Cookies- Hot Cocoa in the palm of your hand!

Hot chocolate is just essential to winter and Christmas at my house. Winter just isn’t winter without playing in the snow and coming in to warm up with a mug of Hot Cocoa. I hated when my fingers were finally warming up and they tingled like crazy, though. If you’ve ever lived through a bitter cold winter, you know what I’m talking about!

Growing up we would would also dip TOAST into our hot cocoa.

I know.

Don’t knock it until you try it though! It’s the magical sweet & salty experience similar to chocolate covered pretzels. I’ve introduced this to my kids and it’s their favorite way to warm up, too. ?

This cookie though, screams winter and Christmas to me. I literally substituted part of the flour for hot chocolate mix in my favorite chocolate chip cookie recipe. The results were SANTA CLAUSE MAGICAL, I tell you!

Not overly chocolaty, but it definitely tases just like hot chocolate. The mini marshmallows and chocolate chips really push it over the edge. My kiddos gobbled these up, and fast!

How to make Hot Chocolate Cookies

To start, cream together butter, sugar and brown sugar. Cream until fully incorporated, light and fluffy.

Add in your eggs and vanilla.

Next go in your dry ingredient. The flour, baking soda, salt and hot chocolate powder!

Next, stir in semi sweet chocolate chips and extra mini marshmallows if you’d like. The more marshmallows the better in my book. ?

Scoop onto a cookie sheet. I like to use a cookie scoop to keep all of my cookies uniform in size. It saves so much time, too!

Arrange 12 cookies on each cookie sheet. Bake at 350° for 9-11 minutes. Pull out of the oven when no longer glossy on top. Allow to cool for 10 minutes on the pan before transferring to a wire cooling rack.

Store at room temperature in an airtight container for up to 3 days.

These cookies freeze well! Freeze in an airtight container or baggie for up to 1 month. Pull out of freezer and let sit at room temperature for 2 hours to defrost.

Ingredients

  • 1 cup butter
  • 3/4 cup granulated sugar
  • 1 cup brown sugar
  • 2 eggs
  • 2 tsp vanilla
  • 2 1/4 cup flour
  • 3/4 cup hot chocolate mix
  • 3/4 tsp salt
  • 3/4 tsp baking soda
  • 1 cup semi sweet chocolate chips
  • 1 cup miniature, dehydrated marshmallows (optional)

Instructions

  1. Preheat the oven to 350°.
  2. Cream together the butter, both sugars, eggs and vanilla.
  3. In a separate bowl, sift together the flour, hot chocolate mix, salt and baking soda.
  4. Mix the dry ingredients with the creamed mixture. Mix well.
  5. Fold the chocolate chips and mini marshmallows into the cookie dough.
  6. Scoop onto a greased cookie sheet.
  7. Bake at 350° for 9-11 minutes or until the tops are no longer glossy.
  8. Cool on the pan. Store in an airtight container for up to 3 days.

  1. My cookies are coming out flat, flat, flat. I’ve tried adding a little flour and chilling the dough. Suggestions? I live in Utah too, so it’s not an altitude thing. And they’re a little oily.

  2. Hi Michelle- I would suggest to add another 1/4 or so of flour. That will take care of the oily issue and the flatness. The difference in hot cocoa powders May have caused this issue. Hope this helps!
