Fruit Pizza Bar- The Party Dessert that Dreams are made of!
Last week I helped host a baby shower for my one of my cute friends. She is having TWINS! She is the cutest little pregnant lady ever and I was so happy to help plan and host her shower
My friend, Meagan, is the decorating master- she decorated with lots of greenery, burlap, brown Kraft paper and white decor.
The results were absolutely stunning. Classy, feminine, and totally gender neutral.
I helped out with the food planning, prep and assembly. We decided to serve a Fruit Pizza Bar and a Sandwich on a Stick.
The fruit pizza bar was a major hit! Most people came back for seconds, if not thirds!
The prep was actually really simple and went quickly. A couple of friends and I got together one afternoon to knock the prep out.
Three hours is all it took for us to have 120 cookies, the frosting made and all of the fruit cut!
I absolutely loved setting up the fruit pizza bar; supply the cookies, frosting and every fruit you can think of and then everyone can make their own dessert just how they like!
How to make the best Sugar Cookies for Fruit Pizza
The ‘crust’ is made from a very simple but totally delicious sugar cookie recipe. The dough comes together quickly using 6 simple ingredients.
Butter, sugar, vanilla, an egg, flour, and baking powder are mixed together either with handheld beaters or a stand mixer.
You could definitely roll and cut the cookies out, but since we were making sooo many cookies we were going for the fast version.
I scooped the cookie dough out using my trusty cookie scoop, then flattened the cookie dough using the bottom of a glass cup.
I dipped the bottom of the glass cup in some sugar before flattening the cookie dough. This helps the dough not stick to the bottom the cup and gives the cookie a nice, sparkly finish.
Bake at 350° for 8 minutes or until puffy and no longer glossy in the center. Take the cookies out before they start turning brown. If they turn brown, you’ll have a crispy cookie instead of a chewy one.
How to make the Fruit Pizza Creamy Vanilla Frosting
This Creamy Vanilla frosting might be the best tasting thing on planet earth. Honestly. I could (and most likely do ?) eat it by the spoonful!
The creamy frosting is made by folding together my all time favorite buttercream frosting with some Cool Whip.
If you’d prefer to use fresh whipped cream, be my guest! I have done that before and it is delicious! We were aiming for fast and easy this go around, though.
The vanilla buttercream is made from butter, powdered sugar, milk and vanilla. Using beaters or a stand mixer, mix until combined and light and fluffy.
Then fold cool whip into the buttercream until well combined.

Really, just about any fresh fruit will work well on Sugar Cookie Fruit Pizza! Here are some ideas:

Ingredients
Sugar Cookie ‘Crust’
- 1 cup butter softened
- 1 cup granulated sugar
- 3 tsp vanilla extract
- 1 egg
- 2 tsp baking powder
- 3 cups flour
Creamy Vanilla Frosting
- 1/2 cup butter
- 3 cup powdered sugar
- 2 tsp vanilla
- 2 tbsp milk
- 1 8 oz tub Cool Whip
Diced Fresh Fruit, as toppings (see ideas above!)
How to make Fruit Pizza Cookies
Cookie ‘Crust’
- Preheat oven to 350°.
- Cream together the butter and sugar in the bowl of a stand mixer for a full 3 minutes.
- Scrape sides and add in vanilla and egg. Mix until combined.
- Add flour and baking powder to the bowl. Mix slowly at first gradually getting faster until the dough comes together. The texture should be like Playdoh. Add a little flour or water if needed to get it to a soft, pliable consistency.
- Scoop the dough into balls. Using the bottom of a drinking cup, smash the cookie dough flat. First dip the bottom of the cup into a bowl of sugar and then flatten the cookie dough.
- Bake at 350° for 6-8 minutes or until the centers are puffy and no longer glossy. Pull the cookies out of the oven BEFORE they start turning brown. If they turn brown, the cookie will be dry and ‘crackery’ instead of soft and chewy.
Creamy Vanilla Frosting
- Combine all ingredients in the bowl of a stand mixer using the whisk attachment. Whip until well combined.
- Gently fold the buttercream and the Cool Whip together until combined and smooth.
Assembling the Fruit Pizzas
- Spread a generous amount of the Creamy Vanilla Frosting onto the sugar cookie base. Top with fruit of your choice.
Note: Please note the differences in the sugar cookie crust in the photos in this post. For one set, I rolled and cut the sugar cookies out. These are very uniform and are perfectly circular.
The other set of images, I used the scoop and squish method described above. This will result in a rustic looking cookie.

Hi!
I was so excited to make these…but nothing turned out right? What did I do wrong? 😢. I know my little 3 year old was helping and she threw the egg in before butter and sugar was mixed well. Not sure if that had something to do with the edges turning brown and not cooking evenly. Any thoughts? Also, the frosting was super runny, not thick. Any suggestions? Thanks!

Hi Michelle! It sounds like you have lots of little hands helping in the kitchen, boy do understand that! I think some of the ingredients may have been measured off or a little extra was accidentally tossed in. Give this recipe a try as written, it should work out much better.
