What are Hawaiian Haystacks?

Hawaiian Haystacks are a Chicken and gravy dish served over rice and topped with all the things. Literally. Cheese, chicken, olives, mandarin oranges, green onions, carrots, pineapple and (my personal favorite) chow mein noodles. (See, chow mein noodles.. remind me again why these are HAWAIIAN Haystacks? 😂) I don’t care what they are called, just know that they are GOOD!

Hawaiian Haystack Recipe Ingredients

Making Hawaiian Haystacks have never been easier- all you’ll need are a few staple ingredients and a rotisserie chicken.

  • Cream of Chicken Soup– If you don’t love canned soup, feel free to make your own Homemade cream of Chicken Soup.
  • Sour Cream
  • Milk
  • Shredded Cheddar Cheese– I like to use sharp cheddar cheese to make the sauce extra tangy.
  • Garlic Powder
  • Rotisserie Chicken– This just makes this meal even easier. You could easily use leftover chicken from another meal, though!

How to make Hawaiian Haystacks

All you’ll need to do to make the gravy is combine these above ingredients in a sauce pan and heat through. The exact ingredient amounts will be listed in the recipe card below.

Hawaiian Haystack Toppings

  • chicken
  • shredded cheese
  • pineapple
  • mandarin oranges
  • coconut
  • matchsticks carrots
  • olives
  • green onions
  • chow mein noodles

What to serve with Hawaiian Haystacks

  • Rice: Hawaiian Haystacks are traditionally served over a bed of steamed white rice. The rice serves as a neutral base that complements the flavorful toppings.
  • Shredded Coconut: Sprinkle some shredded coconut on top of your Hawaiian Haystacks for an added tropical flair and a hint of sweetness.
  • Chopped Pineapple: Fresh chunks of pineapple bring a burst of tangy-sweetness that pairs perfectly with the savory chicken and creamy sauce.
  • Sliced Bananas: For a unique twist, some people enjoy adding sliced bananas to their Hawaiian Haystacks, creating a delightful sweet and savory combination.
  • Chow Mein Noodles: The crunchy texture of chow mein noodles adds a nice contrast to the soft rice and toppings, creating an enjoyable mix of flavors and textures.
  • Chopped Green Onions: Adding some chopped green onions provides a refreshing burst of oniony flavor to the dish.
  • Diced Tomatoes: Fresh tomatoes add a burst of juiciness and acidity that complements the other ingredients.
  • Sliced Almonds: Toasted sliced almonds offer a nutty flavor and crunchy texture that elevates the overall dish.

How to store Leftover Chicken Haystacks

If you have leftover Hawaiian Haystacks with chicken, proper storage is essential to maintain their quality for later consumption. Follow these steps to store them correctly:

  1. Cool Down: Allow the Chicken Haystacks to cool to room temperature before storing. This helps prevent condensation and keeps the dish from becoming soggy.
  2. Divide and Store: If you have a large batch, consider dividing the leftovers into individual portions. Store each portion in airtight containers or sealable plastic bags.
  3. Refrigerate: Place the containers or bags in the refrigerator and store them for up to 3 to 4 days.
  4. Reheat: To reheat the Chicken Haystacks, remove them from the refrigerator and either microwave them on medium power, stirring occasionally, or reheat them in a covered oven-safe dish at a low temperature until warmed through. You may need to add a splash of water or sauce to prevent drying.
  5. Serve Fresh Toppings: When reheating, it’s best to serve fresh toppings separately rather than reheating them with the dish to maintain their texture and flavor.

Hi there , this is a great variation on a recipe my family has enjoyed forever.Very tasty! However, is your amount listed for the cream of chicken soup correct (1-22 OZ can of cream of chicken soup)? With the sour cream and cheese, this made way too much liquid. I used more chicken than called for and it was still too much gravy. Should it have been 1- 10 oz. can and called it good? I know I will have leftover sauce so think I will improvise and turn it into soup with leftover green onions, chicken, etc. Thanks for the great recipes!

  2. Hi Patsy! My family likes this how it is written. We like to use the chicken as one of the many toppings and only put 4 or 5 diced pieces on each haystack. Feel free to use less cream of chicken soup to make it more to your family’s liking, though! ❤️

  3. This recipe is great. We had a ton of leftover gravy because it’s just me and my husband – could I freeze the extra for later? Have you tried this?

  4. Yes! You could definitely freeze for a later day. This works well with this recipe!
